The Line Cook will use innovative ideas to create an extraordinary dining experience that exceeds the expectations of our guests, under the guidance of the Executive Chef and Culinary Team.  The Cooks will manage all aspects of the food production for the kitchen, including food preparation according to descriptions. The Cooks will prepare food items for guests using quality ingredients and a predetermined method, all in a timely and consistent manner.  Also responsible for setting up station with predetermined mise en place required for service at the Outlets and Banquets, while adhering to applicable policies and regulations.

  • Consult with Executive Chef and Culinary Team on a daily basis as well as with other departments that are directly related to the Food & Beverage Department
  • Responsible for preparing required entrees and food items while demonstrating great work ethics, pride and creativity to exceed guests' expectations 
  • Take precautions to prevent food spoilage loss of product
  • Maintain knowledge of all daily and special menu items and recipes
  • Ensure that all conducted training of food preparations, hygiene and grooming standards is understood and followed
  • Check food storage areas and refrigerators for cleanliness and proper functioning and report any discrepancies to the supervisor
  • Ensure that all kitchen Mise en Place is prepared according to production plan and kitchen operating standards
  • Ensure constant rotation of all products in the kitchens
  • Ensure all OSHA, health and sanititation regulations are adhered to throughout food preparation
  • Actively participate in all training activities
  • Must maintain a professional, neat and organized appearance according to Hotel Granduca standards
  • Maintain and clean and sanitary work environment
  • Must be able to work required schedules, including nights, weekends and holidays
  • Perform other duties as assigned





  • High school diploma or related college coursework required
  • One year of related experience in a luxury or full-service hotel
  • ServSafe or Food Handler's certificate is required
  • Experience in baking, broiling, frying, steaming, braising and sautéing
  • Must be familiar with different garnishes for attractive presentation
  • Demonstrate excellent command of English, verbal and written
  • Bilingual  - English and Spanish - preferred
  • Must be able to push, carry up to 50 pounds
  • Ability to stand, bend, lift, stretch, reach up to 2 feet, use hands, for long periods
  • Ability to taste and smell, see, and hear
  • Must be able to work any shift, including weekends and holidays
