Banquets - Set-up/Houseman


The Banquet Houseman will setup meeting space as well as setup of food and beverages stations for guests according to established Hotel Granduca standards and in an engaging and hospitable manner.



  • Responsible for all knowledge presented on Banquet Event Order and function/setup sheets.
  • Responsible for all client knowledge pertaining to the event setup.
  • Responsible for organization and structure of event timetable for refreshing and cleaning meeting room and break area.
  • Communicate to banquet manager or culinary members any needs and/or special instructions for the meeting/event setup, service and breakdown.
  • Responsible for proper and efficient meeting/banquet room and meeting/banquet area set up, to include transportation and preparation of tables, action stations, buffets, and entertainment areas.
  • Complete and efficient breakdown and clean-up of meeting/banquet room and meeting/banquet area set up space.
  • Responsible for knowledge of all types of service offered.
  • Maintain overall presentation of all areas including cleanliness, physical condition, and appropriate stocking of all condiments, buffets, utensils, and service stations and items. 
  • Communicate with other departments and client needs.
  • Communicate to manager any inventory needs for meeting/function setup.
  • Secure all equipment and maintain security of all items needed for meeting/function usage.
  • Maintain guest confidentiality.
  • Participate and assist in controlling the loss and waste of food and beverage product and following F&B guidelines with regard to staff food and beverage consumption.
  • Responsible for knowledge of Hotel Granduca’s facilities and amenities to assist guests with directions and questions.
  • Must maintain a professional, neat and organized appearance according to Hotel Granduca standards.

  • Must be passionate about providing warm, engaging and personalized service.

  • Must be able to work flexible schedules, including nights, weekends and holidays.




  • Prior banquet houseman experience preferred
  • Minimum high school diploma or equivalent.

  • Prior experience in a luxury hotel or hospitality environment preferred

  • Must possess clear, concise written and verbal communication skills and be able to communicate professionally and effectively with guests, fellow associates, and vendors.
  • Current TABC Seller Certification.
  • Current Texas Food Handler’s Certificate

  • Must be of legal age according to state regulations to serve alcohol.
